Crispy Rice Paper Salmon Bites
Hey all, Lizzie here! Today, I am sharing my version of the recipe for crispy rice paper salmon bites. I originally saw this dish on TikTok from @myhealthydish and had to try it out for myself. I'm so glad I did, because my boyfriend and I absolutely LOVE this dish. It's super easy and good for you too! Ingredients:
Two salmon fillets (I get my salmon from the fresh fish section at publix or sam's club) / two jalapenos / one avocado / sriracha / rice paper / green onions (I don't always add these but I usually do most of the time)
Start by preparing your salmon. I cut my salmon into bite-sized square pieces, and I season them with Old Bay seasoning. (See photos above).
Next, I preheat my air fryer. If you do not have an air fryer, you can cook them in a frying pan with olive oil (or oil of your choice!) at a medium heat. Just make sure they are crispy on both sides and cooked all the way through. (Be mindful! The oil splashes!) 
While your salmon is cooking, I like to prepare the rest of the ingredients. Chop the jalapenos into slices, you want them to be relatively thin rings. Cut the avocado in half and peel off the skin. Cut the avocado once long ways, and then cut perpendicular about 6-7 times to make decent sized chunks. Once your salmon is cooked, you are ready to start rolling.
You can use the large sized rice paper or the small size. With the smaller sized rice paper, I will roll it twice. With the larger size, I roll only once. Wet the rice paper with cool water, and lay flat on a surface. I begin laying my ingredients as it dries. I put a litttle sriracha in the center, one slice of avocado, and one piece of salmon.
Roll similarly to how you would roll a burrito. I take one edge and fold it over the center, fold in each side, and finish rolling it through. Repeat with a second piece of rice paper. (See photos for an example).
Once you have finished rolling all your salmon, its time to give it a little crunch & crispiness!            
(Here's a tip: preheat your frying pan with your favorite oil when you're about 2/3rds of the way finished so you don't have to wait for your pan to heat up when you're done rolling!) Place the rolls into the frying pan and let it cook for about 2 minutes on each side or until you see the rice paper crisp up on each side.
Once you get through all of them crisping up, ENJOY!!!
Extra: I don't have a clear cut recipe for the sauce. I combine small amounts of rice vinegar, sriracha, and soy sauce. I eyeball the amounts and mix them all together! (My ancestors tell me when to stop... just kidding lol.)
